Italian Verde Sauce w/ Anchovies & Capers

Italian Verde Sauce - Recipe by Trish Keefer

This delicious sauce can double as a dressing and a sauce depending on what you are making. I use it on lamb, steak, fish, eggs, and as a salad dressing. The depth of flavor from the ingredients elevates anything you add it to, and a tablespoon goes a long way!

Ingredients List:

  • 3/4 cup extra virgin olive oil

  • 3 Tbsp fresh squeezed lemon juice

  • Finely grated zest of 1 lemon

  • 1 Tbsp salted capers

  • 6 anchovy filets

  • 6 garlic cloves

  • 1 1/2 cups Basil leaves (or flat leafed parsley - leaves only)

  • 1/2 tsp fresh black pepper

  • pinch of salt (if desired, to taste)

Instructions:

  1. Add all ingredients to a high powered blender or food processor and blend until smooth.

  2. Pour into a fridge safe container (recipe makes approximately 1.5 cups sauce).
